Let’s Swedish Fika!

Glad nationaldag kompisar. Happy Sweden day!


Firar ni idag? Jag firar med lyxfikat. Älskar den här idén. Översätter nedan till alla som int pratar svenska (än). I translate this post for my friends and family who doesn’t speak swedish (yet!). 

Today is Sweden’s national day. Hurrah! Love you beautiful country. We celebrate with fika, because, you know, we’re Swedish. Make these yummy, chocolatey balls, brew a lot of strong coffee, invite some friends (or not, more fika for you!) and have a Sweden moment where ever you happen to be. Maybe you even think about yours truly 🙂 You are always with me in my heart. Love & kisses/Susanne

Strawberry chocolate balls, makes about 8

8 fresh strawberries, rinsed and dried

100 gram soft butter (0,5 U.S cup)

90 gram caster sugar (0,5 U.S cup, you can reduce this or use honey or agave instead)

100 gram rolled oats (1,25 U.S cup)

3-4 tbsp cocoa

1 tsp vanilla extract

2 tbsp espresso/strong coffee

pinch of salt

to garnish: coconut flakes/finely grated coconut

Cream sugar and butter together, add the rest of the ingredients and mix well. Shape the dough into 8 balls, flatten the ball in your hand, fill with a strawberry. Roll and seal the dough around the strawberry. Roll in the grated coconut. Store in fridge. You can make this up to a day in advance.
